Lagar Quixote located in El Toboso, is the first winery in Castilla-La Mancha to recover the "ancestral elaboration”, a method that consists of bottling the must while it is still fermenting, without adding sugar or yeast. The result is a 100% natural sparkling wine.

We invite you to visit our winery and enjoy a glass of wine accompanied by a tapa, in a warm and friendly atmosphere. Our Aire Natural wine is savored unhurriedly, in company, with the necessary time to understand its history and essence.
Here, each visit is unique, without rigid schedules or marked itineraries. We adapt to each visitor so that the experience is as special as our wine.

In-depth Experience
For those who wish to immerse themselves in the soul of our wine, we offer a full day that begins in the vineyard, the root of everything. We will touch, smell and listen to the history that its centenary vines tell us.
Then, in the winery, we will go through each step of the winemaking process, discovering how the grapes are transformed into a natural wine. Throughout the day, we will have two tastings paired with the best products of the region.
Without rushing or rigid schedules, this experience is designed for those who want to experience wine with all their senses.

El trabajo de César es único e inspirador. Elabora un vino completamente natural, él solo, poniendo todo su cariño y empeño en cada paso del proceso. El resultado es un vino que sabe a naturaleza y a cada una de las estaciones que lo han visto madurar :)
Es una bodega que elabora vinos 100% naturales, no solamente sin sulfitos que ya es difícil encontrar un vino de esas características. Desde la viña que no se riega desde hace más de 30 años, que no se abona, hasta la exquisita elaboración en bodega con el máximo de cuidados artesanales. Los vinos resultantes son excelentes con diferentes características dependiendo del momento de la recolección de la uva. Más o menos afrutados y con burbuja o no, siempre con una calidad difícil de encontrar en esta época de superproducciones. Además es posible compaginar la degustación con otros eventos culturales del tipo literario, arquitectónico, gastronómicos. Qué decir además del pueblo más conocido universalmente, donde además puedes pernoctar en sitios como la Hospederia Rural Casa de la Torre, espectacular palacete lleno de historia y mobiliario histórico. No llegan las palabras a describirlo todo y no digo nada, si eres aficionado a Cervantes, lo que puedes descubrir .
