Bodega Palomillo is a family project founded by Francisco García "Palomillo" and Inés Asensio in Vélez-Rubio, as a tribute to a long winemaking history in these lands dating back to the time of Carthage. The winery has more than 60,000 organic vines in the El Yunco de los Gázquez area, at 980 meters above sea level, within a unique microclimate with continental winters and Mediterranean summers that give character to its wines. The vineyards, planted on slopes with slate soils under dry farming conditions, are certified organic by CAAE and vegan, with no unnecessary additives.
The range includes white, rosé, young red wines, aged wines and signature wines made from Tempranillo, Syrah, Merlot, Chardonnay and Vermentina. Among them stands out Resurrección, a limited-production red wine aged for four years —part of that time buried underground among wheat flour and straw— and unearthed every Easter Sunday. The winery is part of the Sabores Almería label and has received recognition in competitions such as Ecoracimo and the Wine Up! Guide.

Bodega Palomillo organizes personalized visits to its estate in El Yunco de los Gázquez. The experience combines a walk through the organic vineyard with a visit to the winery facilities and a tasting of its wines. Each visit is prepared individually, so it is essential to contact in advance to book and define preferences.

Hemos estado hoy en la bodega por recomendación de unos amigos para la elección de vinos de nuestra boda. Bodega pequeña, vinos exclusivos con muy buen sabor y calidad. Y que decir de los anfitriones Paco e Inés, que gusto dar con personas como vosotros que transmiten tanto. A parte de ser la elección para nuestro evento, me parece un planazo súper curioso y recomendable!!
Gran experiencia en Bodega Palomillo, de la mano de nuestros amigos Paco e Inés. Hemos podido aprender mucho sobre la producción de vinos ecológicos, disfrutando de unas instalaciones impresionantes y de un entorno privilegiado. Merece mucho la pena visitarles, y comprar alguno de sus grandes vinos. Gracias por la visita y por la experiencia.
